The differences are the finishes as you said. Oil can is goldish in colour which will wear off at times and get rusted, believing to help spin the ball (I find the club face helps more than rust. I have oil can: three of them 52,56,60). Tour Chrome is similar to most iron set finish and will not get rusted, unless you really use them brutally. Black nickel is a dark finish, looks really great, won't get rusted either, but after a while it get spots on it.
In all, it just the way they look.
